Ratatouille

Ingredients

Preheat oven to 350 degrees. Combine in a large baking casserole:
1 medium peeled diced eggplant
2 medium onions, halved and sliced
  minced garlic
2 medium peeled and sliced potatoes (optional)

Microwave on high for 5-8 minutes.  Remove and add in layers:
2 medium green peppers cut in strips
4 medium zucchini, sliced (not peeled)

Pour over:
2 cans of stewed tomatoes
1 can Rotel tomatoes (optional)

Season with:
1 tsp. fresh basil
1 tsp. fresh oregano
2 Tbsp. chopped parsley or cilantro
2 measures of Sweet N’ Low
1 tsp. lite salt
  pepper to taste

Bake covered for 1-1/2 hours or until vegetables are tender.
